About The Distillery
Akita Seishu was founded in 1865 as “Yamato Sake Brewery'' by Jushiro Ito, 12th generation of the Ito family in Daisen City, Akita. Later, in 1913, their Sake was re-named “Dewa Tsuru,” hoping the “Sake of Dewa country would be as elegant as a crane.” Their Namahage “Devil’s Mask” Kasutori Shochu is distilled 100% using their own Sake kasu (Sake rice lees) which results in shochu that has a soft, smooth Sake palate feel with subtle sweet aromas derived from the use of Sake yeasts.
In addition, 13th-generation Kyonosuke established the Prefectural Brewing Experiment Station as chairman of the Akita Prefecture Sake Brewers Federation. Today, Akita Seishu, inheriting their predecessors’ tradition of excellence, brew Sake and distill shochu that “leaves a lasting impression in the hearts of those who drink it.”
Akita Seishu's official company name is Dewatsuru, which means crane of the Dewa Region.
The family chose this name to convey the elegance of their Sake.

Namahage “Devil’s Mask” shochu was first created in 1983 after the decision was made to save and distill the Sake kasu cake (pressed lees) that remained from brewing Sake. The ginjo yeast used in the Sake kasu gives this shochu a uniquely smooth and elegant fruit character. Devil’s Mask Shochu is the famed sister product of the Sake by the same name.
