About The Brewery

Yamana Brewery, Est. 1716, is located in Tamba City in the central-eastern Chugoku Mountains of Hyogo, a lush green area with beautiful nature and nostalgic scenery that still resembles the original landscape of Japan.

Situated between warm interior mountain air and calm Seto Sea breezes, Tamba experiences unique morning and evening “Tamba Fogs,” which shroud the cityand surrounding mountains, adding to its sense of timeless beauty and mystery.

With a motto of “Working together partnered with the power of young people”, Yamana is reviving original Tanba Toji brewing techniques for the next generation. 

12th generation owner Yoichiro Yamana is spearheading an exciting new vision for the brewery by re-establishing KIMOTO Sake brewing methods originally created by Hyogo and Nara Toji and by re-introducing the use of KIOKE, large wooden fermentation tanks handcrafted from local Yoshino Cedar trees.

  • The word Tamba represents “rice fields,” resembling waves rolling in the soft autumn winds,  inspiring this Sake’s name. Harvest Waves is a true masterpiece brewed in accordance with centuries-old authentic Tamba Toji brewing guild methodologies. It is brewed from Yamada Nishiki Sake rice grown from original Hyogo seeds, crafting a heavenly
    Junmai Daiginjo.

  • □ Tsuchi Sake Shizen Shu" Nojoho Junmai Ginjo is a rare and unique sake crafted from the revived Nojoho rice, once lost to production after the war. With a medium body and mild aromas of strawberry and banana, it offers hints of nuttiness and a gentle balance of the five flavors: sweet, sour, spicy, bitter, and salty. Brewed with organic Nojoho rice, Meiri Ogawa yeast, and very soft subterranean water, this sake embodies a harmonious connection to the Earth.

  • This Umeshu is created from a blend of “Okutamba” Junmai Sake, Japanese sugar beets, and Ume plum juice from Wakayama Prefecture, known for their centuries-old plum agriculture.  A dessert Sake created by the Tamba Toji for the princesses and lords of the region, this nectar of the gods is a unique but natural extension to the incredibly refined Sake from Yamana Sake Brewery.

    A blend of “Okutamba” Junmai Nihon-shu, Japanese sugar beets, and plum juice from Wakayama. Ume plums’ vibrant acidity balances the lip-coating honey-like sweetness. Hints of persimmon, dried fruits, figs, and nuts add complexity that rivals the finest dessert wines.
