Step 2. Milling Process
Milling / Polishing
Modern vertical rice milling machines are extremely precise, allowing layers of the rice grain to be incrementally milled without cracking or crushing. Brown rice (Genmai) trickles from a storage canister above onto a spinning stone wheel which “sands” each rice grain for a moment before it drops through the milling chamber and is carried back up to the storage canister to repeat the sequence. The process can take from 15 to 80 hours depending on the desired polish. Great care is taken to avoid breaking the fragile grains while milling symmetrically around the shimpaku. (starchy heart)
